Healthy Vegan Chocolate Banana Muffins
Who says eating healthy has to taste bad. These muffins are vegan, the option for gluten-free (which are my favorite), low in sugar & taste incredible. I’m not vegan nor do I have a problem with gluten but I always think it is a good idea to include these principles in your diet. To have a healthy balance.
The Recipe for Chocolate Banana Muffins:
preheat oven to 350*
2 cups mashed bananas (about 4)
2 1/2 tsp. vanilla
2 Tbsp. white or cider vinegar
1/4 cup avocado oil (or oil of your choice)
1/4 cup maple syrup (you can use white sugar)
Whisk these first 5 ingredients together
1 3/4 cups white, oat, or gluten-free flour (they all work great)
1/2 cup cocoa powder
1 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp. salt
1 cup chocolate chips (optional)
1 cup chopped walnuts (optional)
Add the following ingredients & stir till well combined
Line muffin pan with liners - about 18
Fill 3/4 full & bake 15 minutes
