Ingredients
1-15oz can black beans drained and rinsed
1/2 cup cocoa powder
1/3 cup granulated sugar: coconut, organic white sugar, turbinado
1/4 cup unflavored milk alternative of your choice (you can also use milk)
1/4 cup avocado, canola or coconut oil
1 tsp. vanilla extract
1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. creamy natural peanut butter (you can add more if you like)
1/4 cup regular or vegan chocolate chips
Instructions
Preheat oven to 350 degrees. Lightly spray with oil in an 8x8 baking pan.
Place beans, cocoa powder, sugar, oil, milk, vanilla, baking powder, and salt into a food processor bowl and blend until completely smooth, stopping to scrape down the sides of the bowl as needed.
Spread batter evenly into prepared pan. Distribute a few dollops of peanut butter on the top of batter and swirl with a knife. Sprinkle the top with chocolate chips.
Bake until a toothpick inserted into the center comes out clean, about 22-24 minutes.
Allow to cool completely before cutting.
