Colorful Buddha Bowl with Tahini Dressing

So why is this called a Buddha Bowl? In essence, the Buddha Bowl is a symbol of nourishment, abundance, and the simple joy of feeding the body and soul with care and mindfulness.

Ingredients:

  • Mixed greens (like spinach, kale, or arugula)

  • 1 avocado, sliced

  • A handful of cherry tomatoes, halved

  • 1 sweet potato, cubed and roasted

  • tofu or chicken, grilled and cubed

  • Sesame seeds for sprinkling

  • For Tahini Dressing:

    • 3 tablespoons tahini

    • 1 tablespoon lemon juice

    • 1 garlic clove, minced

    • Water to thin

    • Salt and pepper to taste

Instructions:

  1. Prepare Ingredients: Roast the sweet potato cubes at 400°F with a little olive oil, salt, and pepper until tender. Grill the tofu until it's slightly crispy on the outside.

  2. Make Tahini Dressing: Whisk together tahini, lemon juice, minced garlic, salt, and pepper. Add water until you reach your desired consistency.

  3. Assemble the Bowl: Start with a base of mixed greens. Arrange the avocado slices, cherry tomatoes, roasted sweet potatoes, and grilled tofu on top.

  4. Serve: Sprinkle with sesame seeds and drizzle with the tahini dressing. Serve with extra dressing on the side if desired.
