Cranberry Relish
I was asked once what my favorite Thanksgiving recipe was. I did not hesitate; it was this cranberry relish recipe.
We minimize cranberry relish. I get that; I did until I had this recipe. My mom started this cranberry tradition, and I can’t imagine Thanksgiving without it. It is refreshing and healthy. I make it weekly until you can’t buy fresh cranberries in the store.
Recipe:
1 large bag of cranberries (I buy mine at Costco) or two small bags from the grocery store
1 Orange
1 Green Apple
1/2 cup of sugar
Keep the rind on the orange, and cut it into chunks. Put the pieces into the blender. Core the apple, then cut into chunks and put them in the blender. Add your sugar and pour the bag of cranberries in. Blend till smooth, like applesauce. Put the mixture in a bowl that seals. This will be the easiest thing you will make for Thanksgiving.
This recipe lasts for a week in the refrigerator. I triple the recipe for Thanksgiving - it makes excellent leftovers, but you will be amazed how many people will go back for seconds or thirds.
