Eggroll In A Bowl
Recipe serves 2 - If I’m making this for 4 people or for leftovers, I don’t double the meat but double everything else. You will want leftovers. It also freezes well.
1# spicy ground turkey or chicken - you can substitute with tofu for my vegan & vegetarian friends
onion diced or dehydrated onion
1 pkg dry cole slaw mix
1/2 tsp. ginger
3 tsp. garlic
1/4c. water
2 Tbsp. coconut aminos or soy sauce
2 tsp. apple cider vinegar
1/2 tsp. salt
1/4 tsp. pepper
Red pepper flakes if you like spicy - optional
Brown meat or tofu in wok or large saucepan.
Add: onion, garlic & ginger - stir and cook with meat
Add: water & cabbage - toss and cook till cabbage is wilted
Add: coconut aminos or soy sauce, apple cider vinegar, salt & pepper
Cover & simmer till everything is cooked well together.
Serve in a bowl - enjoy!
